CREAMY SAUSAGE AND SWEET POTATO SOUP
INGREDIENTS:
1 tablespoon olive oil
1 pound dressing (Italian or your favorite type), prepared
1 onion, diced
2 cloves garlic, minced

2 sweet potatoes, peeled and diced
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon red pepper powder
Salt and pepper to taste

1 cup chopped parsley
Fresh parsley for garnish (optional)
INSTRUCTIONS:
Olive oil in a large pot over medium heat. Add the sauce, loosen with a spoon and cook until
thickened.

Add the green onion to the pan and cook until soft.
Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
Add the roasted potatoes, chicken broth, dried thyme, smoked paprika, salt and pepper. Bring the
soup to a boil and let it cook until the potatoes are cooked.
Reduce heat to low and stir in whipped cream. Let sit for 5-10 minutes to absorb the flavors.

Adjust seasoning if necessary. Serve the creamy sauce with delicious, hot sweet potato soup, possibly
garnished with fresh parsley.
