Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Puff Pastry:
Roll out the puff pastry on a lightly floured surface to smooth any seams. Cut into squares or rectangles, depending on the size of your ingredients.

Assemble the Pastries:
Spread a thin layer of Dijon mustard on each puff pastry piece, if using.
Place a slice of ham and a slice of cheese on each piece, cutting them if necessary to fit the pastry without hanging over the edges.
Fold the pastry over the filling and press the edges to seal. Use a fork to crimp the edges for a better seal and a decorative touch.
Apply Egg Wash:

Brush each pastry with beaten egg. This will give your pastries a golden, shiny finish when baked.
If desired, sprinkle the tops with additional grated cheese or sesame seeds for extra flavor and texture.
Bake:
Arrange the prepared pastries on the baking sheet. Bake in the preheated oven for 15-20 minutes, or until the pastries are golden brown and puffed up.
