Easy Hamburger Stew Recipe
. This hearty, healthy burger stew, also known as poor man’s stew, is made in under forty minutes with ground beef, fresh vegetables, and a perfect blend of spices, most of which you may already
know of have a hand.
Ingredients
• 1 1/2 pounds lean ground beef

• 1 medium onion, chopped
• 2 cloves garlic, chopped
• 1 teaspoon dried oregano
• 1 teaspoon dried parsley
• 1/2 teaspoon crushed rosemary

• 1/2 teaspoon Thyme leaves
• 4 carrots, peeled and chopped
• 2 russet potatoes, peeled and chopped into small cubes
• 1 14.5-ounce can roasted tomatoes
• 1 1/4 cup low-sodium beef broth

• 2 tablespoons tomato paste
• 2 /3 cups frozen peas
• Salt and pepper to taste

• In a heavy pot or pot over medium heat, brown the ground beef. When the browning process is about halfway done, add the onion and cook until softened and the ground beef is browned, about
5 to 6 minutes. Drain off excess fat.• Reduce heat to low. Add garlic, oregano, parsley, rosemary, and thyme; Cook for 1 minute, stirring constantly. Add potatoes, carrots and roasted tomatoes.
• In a large bowl or measuring cup, stir together beef broth and tomato paste. Stir it into the pot.Cover and simmer for 15 minutes.
• Add the peas and simmer covered until the potatoes and carrots are soft. Season with salt and pepper.
Notes
• Use lean ground beef or lean ground beef with chili, draining excess fat after cooking the onions.
• Swap the ground beef for another ground meat, such as ground chicken, ground turkey, or ground pork.• Peel the carrots for aesthetic reasons. The small effort is worth it because of the

beautiful, bright orange color.
• Diced tomatoes can be replaced with roasted tomatoes.
• Russet, russet or golden potatoes work well in this recipe.
• Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days.Freeze in a Ziploc freezer bag for up to 2 months. To reheat, thaw in the refrigerator overnight and reheat on
the stove on low or in the microwave on reduced power.
• Do you like everything with a special twist? Then add some crushed red pepper to taste.
