Honey Curry Roasted Cauliflower with Halloumi & Chickpeas

Ingredients:
For the Cauliflower:

1 medium cauliflower, cut into florets

2 tbsp olive oil

1 tbsp honey

1 tsp curry powder

½ tsp smoked paprika

½ tsp turmeric
For the Chickpeas:

1 can chickpeas, drained and rinsed

1 tbsp olive oil

½ tsp garlic powder

Salt & pepper to taste
For the Halloumi:

1 block halloumi cheese, cubed
-
1 tbsp olive oil for grilling

Directions:
1️⃣ Prep the Cauliflower:
Preheat your oven to 400°F (200°C). In a large bowl, toss cauliflower florets with olive oil, honey, curry powder, paprika, and turmeric. Spread on a lined baking sheet.
2️⃣ Roast the Cauliflower:
Roast for 25–30 minutes, flipping halfway, until golden brown and tender.

3️⃣ Crisp the Chickpeas:
In a separate bowl, coat chickpeas with olive oil, garlic powder, salt, and pepper. Roast them on another tray (or with the cauliflower) for 20–25 minutes until crispy.
4️⃣ Grill the Halloumi:
Heat a pan with olive oil over medium heat. Grill halloumi cubes until golden and crisp on each side, about 2–3 minutes per side.
5️⃣ Assemble & Serve:
In a large serving bowl, combine roasted cauliflower, chickpeas, and grilled halloumi. Garnish with chopped parsley and almonds. Serve warm with lemon wedges on the side.
