Cookies:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon dried culinary lavender
- 1 tablespoon lemon zest
Icing:
- 1 1/2 cups powdered sugar
- 2-3 tablespoons lemon juice
- 1 teaspoon lemon zest
- A few drops of purple food coloring (optional)
- Additional dried lavender for garnish
Instructions:
- Prepare Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the dried lavender and lemon zest.
- Chill Dough: Divide the dough in half, flatten each half into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour or until firm.
- Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll and Cut Dough: On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets. Repeat with the second disk of dough.
- Bake Cookies: Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Prepare Icing: In a small bowl, whisk together the powdered sugar, lemon juice, lemon zest, and purple food coloring (if using) until smooth. Adjust the consistency by adding more lemon juice if necessary.
- Ice Cookies: Once the cookies are completely cool, spread the icing over the tops. Sprinkle with additional dried lavender for garnish.
- Set and Serve: Allow the icing to set before serving.
