Ingredients
1 1/2 cups crushed graham crackers
1/4 cup sugar
1/3 cup butter, melted
2 (8-ounce) packages cream cheese, softened

3/4 cup pureed
2 eggs
1 tablespoon vanilla extract
Lemon zest 1
1/4 cup lemon juice

Instructions
1. Preheat your oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine crushed crackers, 1/4 of the sugar, and melted butter. Press firmly into the
bottom of a 9×9 pan.
3. In a large mixing bowl, beat cream cheese and 3/4 cup sugar until smooth.
4. Add the eggs one at a time and beat well after each addition. Stir in vanilla extract, lemon zest, and
lemon juice until well combined.
5. Pour the cream mixture onto the prepared dough and smooth the top with a spatula.
6. Bake in the preheated oven for 25-30 minutes or until cooked.

7. Let it cool completely before cutting into strips. Refrigerate for at least 1 hour or until ready to
serve.

For those a little more adventurous with their palate, you can add a dollop of blueberry sauce or
raspberry sauce on top before applying the frosting, or stir in the cream cheese mixture for extra
flavor. For a lower-calorie version, you can replace the full-fat cottage cheese with a low-fat or low-fat
version. If gluten sensitivity runs in your family, consider using gluten-free graham cracker crumbs.
