Incredibly spicy ingredients:


1 can (14 oz) sweetened condensed milk Eagle Brand (not evaporated milk)

1/2 cup lemon juice


1 teaspoon lemon zest or 1/4 teaspoon lemon extract

2 eggs, separated

1 graham cracker or pie crust, baked (8 or 9 inches)

1/4 teaspoon cream tartare

4 Tablespoon Sugar



Instructions for Spicy Perfection:

Preheat the oven to 325°F.In a medium bowl, combine evaporated milk, lemon juice, lemon zest (or

extract), and egg yolks. Stir until the mixture thickens elegantly, then lovingly pour it into the chilled

crust of your choice (graham crackers or cake).

In another medium bowl, beat the egg whites and cream of tartar at high speed until soft peaks form.

Gradually add the sugar, a tablespoon at a time, beating persistently at medium speed for about 4

minutes or until the sugar dissolves and forms stiff, glossy peaks.

Spread the meringue elegantly over the cake, making sure to seal it carefully around the edge of the

crust to prevent shrinkage.Bake for 12 to 15 minutes, until the meringue is golden brown or until the


meringue is a delicate shade of brown.

Let it cool, then slice it to serve and let the spicy euphoria envelope your senses. Remember to store

the remaining slices lovingly and protected from freshness in the refrigerator.
