This easy-to-make Mexican street corn and the perfect summer side dish!

And that’s it! Isn’t it SO EASY!? I will definitely be adding this dish to our regular lineup for easy dinners.Have you ever made Mexican street corn at home? If not, you missed something and

should add it to your test list as soon as possible.

Ingredients

o 4 whole ears or 6-8 half ears

o ¼ cup mayonnaise

o 2 tablespoons finely chopped coriander

o 1 tablespoon lemon juice

o 1 teaspoon chili powder

o 1 teaspoon garlic powder

or 4 tablespoons Cotija cheese

How to prepare Mexican street corn to

1. In a small bowl, stir together mayonnaise, coriander, lime juice, chili powder and garlic powder, reserve

2.Grill corn on an outdoor grill or indoors in a grill pan

3. Spread with mayonnaise mixture

4. Sprinkle Cotija cheese

5. Garnish with additional coriander and chili powder

6. Serve and enjoy!
