No-Bake Caramel Cake Apple Eclair Cake
Ingredients:
About apples:
large apples, cored and finely chopped
2 tablespoons unsalted salt
1/4 cup black pepper

1 teaspoon cinnamon
1/4 teaspoon 97 beat to stiff peaks
1 teaspoon vanilla extract
To prepare:
1 package graham cracker crumbs

Bottled water or coffee for garnish (optional)
No-Bake Caramel Cake Apple Eclair Cake
Preparation:
Prepare a layer of apples: Melt the butter over medium heat. in a large skillet. Add apples, brown
sugar, cinnamon and nutmeg. Cook for 10 minutes, stirring occasionally, until the apples are soft and
caramelized.

Prepare the caramel sauce: In a small saucepan over low heat, combine the caramel sugar and
whipped cream. Stir until the caramel melts and the sauce is smooth. Set aside to cool slightly.
Prepare the cream layer: In a large bowl, whisk the pudding mix and cold milk until thick. Add the
cream and vanilla.
Cake Assembly: Place graham cracker crust in a 9×13 pan. Spread half of the cream mixture on the

film. Cover half of the caramelized apples and drizzle half of the caramel sauce over them. Add
another layer of graham cracker crumbs, remaining cream mixture, caramel apples, and caramel
sauce. Finish with Graham’s final piece.
Cover and refrigerate for at least 4 hours or overnight to allow crackers to soften and flavors to infuse.
Before serving, spread with whipped cream and sprinkle with chopped hazelnuts or coffee, if desired.
