OMELETTE COOKIES
Ingredients
• 1/4 cup diced ham
• 5 slices bacon, cooked and crumbled
• 2 eggs
• 2 green onions, egg whites and chopped vegetables

• 1 cup Colby cheese, grated
• 1/2 tablespoon butter
• Extra Flour
How to Make Tortilla Cookies
Using my cookie recipe, cook just before adding the milk and set aside.
In a small frying pan, melt the butter, add the onions and fry for a minute or two to soften. Then add the 2 eggs

and stir gently to start mixing.Remove the eggs from the heat when they start to set. To the biscuit mixture, add
bacon, ham, eggs and onions and stir with a fork until combined into a biscuit mixture. Add the cheese and mix
well again.
Start adding the buttermilk slowly and mix everything with a fork into a soft dough (it will be a little sticky).
Grease a cast iron skillet or baking sheet and preheat the oven to 425 degrees.With well-floured hands, cut a

portion of the cookie dough, roll it in your hands, then place it in the pan and flatten the top slightly.
Continue with the remaining dough. Bake for 15-17 minutes, moving up from the lowest rack of the oven when
the bottom begins to brown. Remove the tops of the cookies and brush them with butter.
