Fondant potatoes are a classic French side dish that elevates the humble potato to a new level of elegance and flavor.

4 large russet potatoes

3 tablespoons vegetable oil

4 tablespoons unsalted butter


4 cloves garlic, peeled

4 sprigs fresh thyme

1 cup chicken or vegetable broth

Salt and pepper to taste




Prepare the Potatoes:

Peel the potatoes and cut off the ends to create flat surfaces on both sides. Then cut each potato in half crosswise to make approximately equal-sized pieces.

Rinse the potatoes under cold water to remove excess starch and pat them dry with paper towels.

Sear the Potatoes:

Heat the vegetable oil in a large, oven-safe skillet over medium-high heat.


Once the oil is hot, place the potato pieces in the skillet with one flat side down. Sear the potatoes until they develop a golden brown crust, about 5-6 minutes.

Flip the potatoes and sear the other flat side until golden brown.

Add Butter and Aromatics:

Reduce the heat to medium and add the butter, garlic cloves, and thyme sprigs to the skillet.

Once the butter has melted and started to foam, baste the potatoes with the butter mixture, ensuring they are well-coated.

Braise the Potatoes:

Carefully pour the chicken or vegetable broth into the skillet, making sure not to splash.

Season the potatoes with salt and pepper to taste.

Bring the broth to a simmer, then transfer the skillet to a preheated oven at 400°F (200°C).


Bake to Perfection:

Bake the potatoes in the oven for 30-35 minutes or until they are tender when pierced with a fork and most of the liquid has been absorbed.

Baste the potatoes with the remaining butter mixture from the skillet halfway through the baking time for extra flavor.


Remove the skillet from the oven and let the potatoes rest for a few minutes.

Transfer the fondant potatoes to a serving platter, discarding the garlic and thyme.

Serve hot, garnished with fresh thyme or parsley if desired, alongside your favorite roast meat or as a standalone dish.


For an extra layer of flavor, you can use beef or pork broth instead of chicken or vegetable broth.

If you prefer a more herbaceous flavor, add a sprig of rosemary along with the thyme.
