Ingredients:

For the Cake:

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

5 large eggs, separated

1/3 cup whole milk

1 teaspoon vanilla extract

1/2 cup finely chopped fresh pineapple (or canned pineapple, drained)

1/2 cup sweetened condensed milk

1/2 cup coconut milk

1/2 cup pineapple juice

Instructions:

Make the Cake:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

Sift together flour, baking powder, and salt. Set aside.

Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow. Stir in milk and vanilla.

Add the sifted flour mixture to the egg yolk mixture and stir just until combined.

In a separate bowl, beat the egg whites on high speed until soft peaks form. With the mixer still running, add the remaining 1/4 cup sugar and beat until egg whites are stiff but not dry.

Gently fold the egg whites into the batter until just combined.

Fold in the chopped pineapple.

Pour batter into the prepared pan and spread to even out the surface.

Bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
