For the Crust:

4 cups shredded hash browns (fresh or frozen, thawed and drained)

1/4 cup melted butter

Salt and pepper to taste

6 large eggs

1 1/2 cups heavy cream or half-and-half

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup chopped green onions

1/2 cup chopped bell peppers

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions:

 

Preheat the Oven:

Preheat your oven to 425°F (220°C).

Prepare the Crust:

In a large bowl, combine the shredded hash browns, melted butter, salt, and pepper.

Press the hash brown mixture firmly into the bottom and up the sides of a 9-inch pie dish or a springform pan to form the crust.

Bake the crust in the preheated oven for 20-25 minutes, or until it starts to turn golden brown and crisp.

Prepare the Filling:

While the crust is baking, whisk together the eggs, heavy cream, salt, and pepper in a large bowl.
