Ingredients

2 cups flour
2 tablespoons cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup salt, fine salt

1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon red food coloring
1 cup buttermilk

For the filling:
100 ml cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract

Directions for Use
1. Preheat your oven to 190°C (375°F) and line a baking tray with baking paper.
2. In a medium bowl, combine flour, cocoa powder, baking powder and salt.
3. Beat the butter and sugar in a large bowl until light and fluffy. Beat in eggs, vanilla extract, and red

pepper flakes until well combined.
4. Slowly add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning
and ending with the flour mixture.
5. Drop spoonfuls of dough onto baking trays, approximately 5cm apart. Bake for 8-10 minutes or
until done. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to
a wire rack to cool completely.
7. For the filling, beat cream cheese, butter, powdered sugar and vanilla extract until smooth.
8. Once the cookies have cooled, place the filling next to one cookie and sandwich it between the
other cookies. Repeat with remaining cookies and filling.
Variations and Tips
For a twist on classic red velvet, try adding espresso powder to cookie dough for extra chocolate
flavor or stir in chopped pecans for a snack. If you are on a different diet, you can also make gluten-
free cakes with the right flour or simplify the filling by using mascarpone instead of cheese.
