Slow Cooker Chicken and Dumplings Recipe

Ingredients:

2-3 boneless, skinless chicken breasts

1 onion, diced

2 cups carrots, sliced

2 cups celery, sliced

4 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of celery soup

1 cup frozen peas

1 can refrigerated biscuit dough (for dumplings)

Instructions:

 

Prepare the Slow Cooker:

Place chicken breasts in the bottom of the slow cooker.

Add diced onion, sliced carrots, and celery on top of the chicken.

Season and Add Broth:

Sprinkle thyme, rosemary, salt, and pepper over the vegetables.

Pour in the chicken broth.

Cook:

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and vegetables are tender.

Shred the Chicken:

Remove the chicken breasts, shred them, and return the chicken to the slow cooker.

Add Soups and Dumplings:

Stir in the cream of chicken and celery soups, followed by the frozen peas.

Cut the biscuit dough into quarters and drop them into the slow cooker on top of the mixture.

Cook Dumplings:

Cover and cook on high for an additional 1-2 hours, or until the dumplings are cooked through and no longer doughy.

Serve:

Serve the chicken and dumplings warm, garnished with fresh herbs if desired.
