Strawberry Cheesecake Ingredients

 

 

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 3 large eggs
  • 1 cup sour cream

Strawberry Layer:

  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water

Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Fresh strawberries for garnish

Instructions:

  1. Crust: In a medium bowl, mix the graham cracker crumbs and granulated sugar. Stir in the melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  2. Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar, vanilla extract, and lemon juice, and continue to beat until creamy. Add the eggs one at a time, mixing well after each addition. Fold in the sour cream.
  3. Strawberry Layer: In a small saucepan, combine the sliced strawberries, granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens and the strawberries soften. Let it cool slightly.
  4. Assemble: Pour half of the cheesecake filling over the crust. Add a layer of strawberry mixture, then pour the remaining cheesecake filling over the strawberries. Use a spatula to smooth the top.
  5. Bake: Preheat the oven to 325°F (165°C). Place the springform pan in a large roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan. Bake for 60-70 minutes or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  6. Chill: Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  7. Topping: Before serving, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the top of the cheesecake. Garnish with fresh strawberries.
