Ingredients
4 medium sweet potatoes, scrubbed clean
2 cups fresh spinach, roughly chopped
1 cup mushrooms, chopped

1 cup cream cheese, softened
1/2 cup grated cheese (Parmesan or cheddar work well)
1/4 cup milk
2 cloves garlic, minced
Salt and pepper, to taste

Directions
Bake the Sweet Potatoes
Preheat oven to 400°F (200°C).
Pierce sweet potatoes with a fork and place them on a baking sheet.
Bake for 45–50 minutes, or until fork-tender.
Prepare the Filling
In a skillet, heat a drizzle of olive oil.

Sauté the garlic for 30 seconds, then add mushrooms and cook until browned.
Add the spinach and cook until wilted.
Reduce heat and stir in the cream cheese and milk. Mix until smooth.
Season with salt and pepper.
Assemble & Bake
Once sweet potatoes are cooked, cut them in half lengthwise and gently scoop out a little of the flesh to make room for filling.
