Upside-Down Apple Cake

Ingredients

For the Apple Caramel Base:

  • 2 medium apples (red or green), sliced

  • 3 tbsp sugar

  • 1 tbsp unsalted butter

For the Cake Batter:

  • 2 eggs

  • 1 cup sugar (200g)

  • 1/2 cup vegetable oil

  • 1 cup milk (regular or plant-based)

  • 2 cups self-rising flour

  • 1 tsp vanilla extract

  • 1 tsp lemon zest or ground cinnamon (optional)

Directions

1. Prepare the Apple Caramel Base:

  • In a round metal pan or skillet, melt the butter with the sugar over medium heat.

  • Stir gently until the sugar becomes golden brown and slightly bubbly.

  • Arrange the apple slices tightly over the caramel in a single layer. Set aside.

2. Make the Cake Batter:

  • In a bowl, beat the eggs with sugar until fluffy and light in color.

  • Add oil, milk, vanilla, and optional lemon zest or cinnamon. Mix well.

  • Sift in the flour (and baking powder if not using self-rising flour). Combine into a smooth batter.

3. Assemble & Bake:

  • Pour the batter gently over the apples in the caramelized pan.

4. Unmold & Serve:
