Blueberry Streusel Bundt Cake

Ingredients:

For the Cake:

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream or Greek yogurt

1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)

For the Streusel Topping:

1/3 cup all-purpose flour

1/3 cup light brown sugar, packed

1/2 teaspoon ground cinnamon

3 tablespoons unsalted butter, cold and cubed

Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan, making sure to cover all the nooks and crannies.

Prepare the Streusel Topping:

In a small bowl, combine the flour, brown sugar, and ground cinnamon. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside.

Prepare the Cake Batter:

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Let the cake cool in the pan for 10-15 minutes, then invert it onto a wire rack to cool completely.

Serve:

Once cooled, slice and serve the cake as is, or dust with powdered sugar for an extra touch.
