4 boneless pork chops
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons Dijon mustard

1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste

Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).

- Season the Pork Chops:
- Season both sides of the pork chops with salt and pepper.
- Sear the Pork Chops:
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the pork chops and sear them for 2-3 minutes on each side, until they are golden brown. Remove the pork chops from the skillet and set them aside.
- Prepare the Sauce:
- In the same skillet, add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the chicken broth, heavy cream, Dijon mustard, and dried thyme. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.
- Bake the Pork Chops:
- Return the seared pork chops to the skillet, spooning some of the sauce over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the pork chops are cooked through.
- Garnish and Serve:
- Remove the skillet from the oven and let the pork chops rest for a few minutes.
- Garnish with fresh parsley before serving.
