300 grams boneless chicken thighs, cut into cubes

2 tablespoons olive oil

½ teaspoon sea salt

¼ teaspoon black pepper

⅔ cup mayonnaise

3 Celery stalks, diced

Preheat your oven to 350°F (175°C). Prepare the chicken by tossing it with olive oil, granulated onion, sea salt and

to 30 minutes or until the chicken breasts reach an internal temperature of at least 165°F (74°C) in the thickest

or longer. Once cool, cut the chicken into ¼ x ½ inch pieces.Combine ingredients: In a large bowl, combine diced

chicken, diced celery, and mayonnaise. Mix well until all ingredients are well incorporated.

Cool: Cover the bowl and place the chicken salad in the refrigerator for 1 to 2 hours, overnight if possible. The
