Lemon Berry Ritz Icebox Cake

Lemon Berry Ritz Icebox Cake

Ingredients

 

2 cups mixed berries (such as strawberries, blueberries and raspberries), finely chopped

1 tablespoon refined sugar

2 tablespoons fresh lemon zest

1 cup heavy cream

1/2 cup mascarpone cheese

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1 pack of Ritz crackers (about 200 grams)

Instructions

 

1. Mix mixed fruit, sugar and lemon juice in a bowl. Let the mixture sit for about 10 minutes to allow

the seeds to release their water.

2. In another bowl, beat the whipped cream until soft peaks form. Add mascarpone, condensed milk

and vanilla and continue beating until well mixed and smooth.

3. Place a layer of Ritz foil in a 9×13 baking dish and cut some to cover any gaps.

4. Divide half of the cream mixture on the foil. Pour half of the fruit mixture over the cream and

spread evenly.

5. Place another layer of Ritz wrap over the fruit, then the rest of the cream mixture, then over the rest

of the fruit.

6. Cover with plastic wrap and refrigerate overnight or for at least 4 hours to allow the sauce to soften

and flavors to blend.

7. Garnish with fresh leaves before serving.

Swaps and Tips

 

Add chopped almonds or chopped walnuts for extra flavor. If you like a spicier taste, add an extra

tablespoon of lemon juice to the filling or add some finely chopped ginger. To avoid dairy, coconut

cream can be used instead of whipped cream and mascarpone.
