This cheesy stuffed flatbread, inspired by the Georgian dish Khachapuri, is a delectable treat with a gooey cheese filling encased in a crispy, golden crust. Here’s how to make it:

Ingredients:

 

For the Dough:

2 cups all-purpose flour

1 teaspoon salt

1/2 teaspoon active dry yeast

3/4 cup warm water

2 tablespoons olive oil

For the Cheese Filling:

1 cup mozzarella cheese, shredded

1 cup feta cheese, crumbled

1 cup ricotta cheese

1 egg (optional, for binding)

1 tablespoon fresh parsley, chopped (optional)

2 tablespoons butter, melted

Olive oil, for cooking

Prepare the Dough:

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes, or until it becomes frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Mix the ingredients until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes, until it is smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Prepare the Cheese Filling:

In a medium bowl, combine the mozzarella, feta, and ricotta cheeses. If using, add the egg and chopped parsley. Mix until well combined.

Assemble the Flatbread:

Preheat your oven to 375°F (190°C).

Divide the dough into two equal parts. Roll each part into a round, about 1/4-inch thick.

Place half of the cheese mixture in the center of each dough round. Spread the cheese, leaving about 1 inch of dough around the edges.

Fold the edges over the cheese filling and pinch the seams to seal, forming a round or oval shape.

Cook the Flatbread:

Heat a large skillet over medium heat and add a drizzle of olive oil.

Place one of the stuffed dough rounds in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crisp.

Transfer the cooked flatbread to a baking sheet and brush with melted butter.

Repeat with the second dough round.

Bake in the preheated oven for 10-15 minutes, until the cheese is melted and bubbly.

Let the flatbreads cool for a few minutes before cutting into slices.

Serve warm, garnished with fresh parsley if desired.
