We have a few recipes that Grandma wants to share here on Baking with Grandma (and some I keep pestering

her to give me too!). One of the things I wanted to revise, modernize and perfect before sharing was…the Scottish



When Grandma started talking to me about snowballs, I was convinced she was talking about Tunnocks

snowballs covered in chocolate, coconut and marshmallows. And it’s great in its own right, let’s be honest!But no,

Grandma was talking about the snowball cakes she baked at the bakery more than three decades ago.

Scottish snowballs are a completely different treat and just as delicious. One that Grandma remembers fondly,


both made in the bakery and also enjoyed by many customers. And when she shared a preview on Instagram, I

was surprised and delighted to see how many people knew what it was and were patiently waiting to post this



°250 grams of flour

°100 grams of sugar


°1 large egg

°0.5 envelopes baking powder

°5 cl oil

°100 grams apricot jam

°100 grams desiccated coconut


*Preparation steps

In a bowl, whisk the eggs with the sugar. Add the oil and mix, then add the flour and baking powder. Mix until

the dough is homogeneous.

Preheat the oven to 180°C (vi). Form balls with your palms, place them on a baking tray lined with baking paper

and bake for 10 minutes.Dip the meatballs in the hot apricot jam, then in the shredded coconut and enjoy.
