The Best Banana Cake

Ingredients:

• 1 1/2 cups ripe banana, mashed

• 2 teaspoons lemon juice

• 3 cups flour

• 1 1/2 teaspoons baking powder

• 1/ 4 teaspoons salt

• 3/4 cup soft butter

• 2 1/8 cups sugar

• 3 large eggs

• 2 teaspoons vanilla

• 1 1/2 cups buttermilk

Glaze:

• 1/2 cup butter, soft

• 1 package (8 ounces) cream cheese, softened

• 1 teaspoon vanilla

• 3 1/2 cups powdered sugar

Instructions:

1 Preheat oven to 275°F / 135°C.

2 Grease and flour a 9 x 13 pan.

3 In a small bowl, mix the mashed banana with the lemon juice; put aside.

4 In a medium bowl, combine flour, baking powder and salt; put aside.

5 In a large bowl, beat 3/4 cup butter and 2 1/8 cups sugar until fluffy.6 Beat in the eggs one at a time, then add

2 teaspoons of vanilla.

7 Add the flour mixture alternately with the buttermilk.

8 Add the banana mixture.

9 Pour the batter into the prepared pan and bake in the preheated oven for one hour or until a toothpick

inserted into the center comes out clean.

10 Remove from the oven and place directly in the freezer for 45 minutes. This makes the cake very juicy.11 For

the glaze, mix the butter and cream cheese until smooth.

13 Add the powdered sugar and mix on low speed until well combined, then mix on high speed until the icing is

14 Spread over the cooled sponge cake dough.

15 If desired, sprinkle chopped pecans over the icing (or hearts!).
