Cranberry orange bread with glaze!!!

 

Simple and uncomplicated! My whole family loves this recipe! If it were up to them, I would do it every day!Try it,

you will love it! To make this recipe you will need the following ingredients:

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup granulated sugar

1 tablespoon orange peel

1/2 cup milk

1/2 cup Canola or vegetable oil

1/2 cup orange juice

2 large eggs

1 teaspoon vanilla

1 1/2 cups fresh blueberries

Icing

1 cup powdered sugar

2-3 tablespoons orange juice

Instructions

Heat the Preheat oven to 350° and also grease a 9 x 5 inch loaf pan.

In a medium bowl, stir together the flour, baking powder and salt until well combined. Put aside.

In a separate small bowl, mix the sugar and orange peel with a spoon until the sugar turns a bright orange

color.Put aside.

Place buttermilk, oil, orange juice, eggs and vanilla in the bowl of a stand mixer (or a large bowl and hand mixer).

Mix on low speed until ingredients are combined.

Add the flour mixture and the orange peel and sugar mixture. Continue mixing on low speed until all ingredients

are smooth like muffin batter.Then add the cranberries and stir with a wooden spoon or spatula until well

combined.

Place the dough in a greased loaf pan. Put in the oven and let rest for 70-75 minutes. If the bread browns too

much, loosely place a piece of aluminum foil on top to prevent it from burning.

The bread is done when very light crumbs are visible when you insert a toothpick into the middle.Remove the

bread from the oven and allow it to cool for 5 to 7 minutes before removing it from the pan and placing it on a

cooling rack.

Glaze

While the bread is cooling, prepare the decorations.

In a medium bowl, stir together the powdered sugar and orange juice.

Beat or use a hand mixer on low speed until the frosting is smooth and creamy. Adjust the amount of orange

juice to achieve the desired consistency.Once the bread has cooled completely, pour the glaze over it, slice and

serve.

Store leftovers in the refrigerator for up to 3 days.
